Our priority is and always has been to deliver the best and most authentic paellas and tapas by following a few simple rules: – We use only the best free range poultry, fish and game from in and around the Sussex area we can find (we don’t use frozen poultry or fish). – We only buy from small family owned farms and companies whenever possible. – All our ingredients are always transported to venues using only refrigerated vehicles.
